French Boulangerie: Recipes and Techniques from the Ferrandi School of Culinary Arts - RIZZOLI
Author FERRANDI Paris

A complete baking course from the world-renowned professional culinary school École Ferrandi, dubbed the “Harvard of gastronomy” by Le Monde newspaper.

From crunchy baguettes to fig bread, and from traditional brioches to trendy cruffins, this comprehensive volume teaches aspiring bakers how to master the art of the French boulangerie. This new cookbook focuses on bread and viennoiserie, the category of French baked goods traditionally enjoyed for breakfast (like croissants and pains au chocolat); it is a perfect complement to Ferrandi’s bestselling French Pâtisserie, which covers baked desserts. Here, the culinary school’s team of experienced chef instructors provides more than 40 techniques, explained in 220 step-by-step instructions—from making your own poolish or levain to kneading, shaping, and scoring various types of loaves, and from laminating butter to braiding brioches. Base recipes for doughs, fillings, and classic viennoiserie provide fundamental building blocks.

Organized into four categories—traditional breads, specialty breads, viennoiserie, and sandwiches—the 83 easy-to-follow recipes provide home chefs with sweet and savory options for breakfast or snacks—from country bread to grissini, pastrami bagels to croque-monsieurs, and kougelhopf to beignets. Select gluten-free, vegetarian, and vegan recipes offer something for everyone. A general introduction explains the fundamentals of bread and viennoiserie making, including key ingredients, the importance of gluten, the steps of fermentation, and an informative glossary.

French at Heart: Recipes That Bring France Home
Marjorie Taylor, Kendall Smith Franchini, Jess Thomson

A gorgeous cookbook about living well the French way from the founders of the Cook’s Atelier, a cooking school in Burgundy, France

French at Heart shows how to create simple, joyous family meals around your own table, in whatever place you call home.

When mother and daughter duo Kendall Smith Franchini and Marjorie Taylor moved to Beaune in Burgundy, France, to open their now-incredibly popular cooking school the Cook’s Atelier, they learned that choosing to appreciate tiny moments more mindfully, like they saw the French do, really opened their hearts.

To them, being French at heart doesn’t mean you have to speak French or live in France; it means slowing down enough to enjoy the little details of every day. Whether that’s preparing a meal for your family and taking the time to enjoy it together around the table or taking an extra moment to set the table with fresh flowers, curating your own joy is worth your time, and this cookbook offers plenty of ideas for ways you can adopt this particularly French habit in your own life.

These are classic recipes that will make you fall in love with things like Salade Niçoise, Duck Confit, and Tarte Tatin.

They are simple recipes, what Taylor and Smith Franchini often cook for their family after a long day, and reflect their take on familiar French favorites. They offer ways to adapt, improve, or simplify classic recipes, along with plenty of additional advice on how to serve a memorable cheese or charcuterie board, curate a French-inspired pantry, start your own kitchen garden, or get the most out of your local farmers’ market.

Creating meaningful moments around meals and sharing them turns out to be quite contagious—and exactly why people love coming to see Taylor and Smith Franchini at their cooking school. Cooking is about more than just the food, and while French at Heart has more than 100 go-to recipes, it is a cookbook for anyone who wants to discover those little details that make our time around the table even more special.

French from the Market
★ “French from the Market is a seductive cookbook that will convert readers into Francophiles and inspire almost everyone else to start composing menus and market lists.” ―Foreword Reviews, Starred Review

This newest cookbook from Hillary Davis focuses on the best of traditional French cooking―provincial cuisine based on produce and foods fresh from the market, simply prepared, and delicious for everyday dining at home.

Hillary Davis shows us in French from the Market that French food isn’t always haute cuisine. Traditional, daily French cooking is provincial and farm-driven. It is also an art, that uses the freshest and finest ingredients available from gardens, markets, and local vendors to put nourishing meals on the table. And, as Davis point out, French home cooking is not hard. The 100 plus recipes for starters, soups, salads, fish, poultry, meats, vegetables, and desserts in this cookbook, along with detailed instructions and tips, prove her right.

Embrace at-home cooking, French style, with these market-fresh recipes: Arugula Salad over Watermelon with Herbed Goat Cheese; Weeknight Halibut in Basil Cream with Cherry Tomatoes; Autumn Harvest Chicken with Grapes, Apples, and Figs; Broiled Lamb Chops with Warm Potato and Herb Salad; Fluffy Cauliflower and Cheese Quiche; and Fruity, Frosty Cantaloupe Sorbet.

More Accolades:

“[E]ncouraging instructions make even more complex dishes seem simple, including the…ingenious ‘beef on a string with horseradish sauce.’…This accessible approach to everyday French fare will appeal to cooks at all skill levels.”―Publishers Weekly

“A chicly styled, easily accessible guide to French home cooking.”―Library Journal

“Directions are fairly uncomplicated, and color photographs portray finished dishes with a zing.”―Booklist Magazine

Italian Coastal - THAMES & HUDSON
Recipes and stories from where the land meets the sea
Amber Guinness

An enchanting and delectable journey to the shimmering waters of the Tyrrhenian Sea, via plates of pasta, baked fish and glasses of peach-laced white wine - from the author of A House Party in Tuscany

Welcome to the Tyrrhenian Sea, home to la dolce vita, sun-drenched islands and seaside towns where even the simplest trattoria has an effortless glamour.

Following on from the success of her first book, A House Party in Tuscany, Amber Guinness travels from the Tuscan coast down through Lazio and Campania via Naples and the Amalfi Coast and on to northern Sicily. Amber delves into the history, stories and flavours that have come home to her kitchen and shaped her food philosophy.

Amber's quest for maximum flavour with minimal effort shines through in these delicious and achievable recipes that will bring an authentic mouthful of coastal Italy to your table: crostini with ricotta and 'nduja; zucchini and mint lasagne; tomato linguine with capers; seabass with pistachio and almonds; Neapolitan vinegary fried zucchini; potato and caper salad from Salina; raspberry tiramisu and the ultimate Amalfi lemon cream cake.

Inspired by the markets and food of summer holidays by the beach, Italian Coastal is a fusion of recipe book, travelogue and memoir – with sumptuous food and travel photography throughout – that will transport readers to the sunny Mediterranean.

A lavish, supersize publication dedicated exclusively to John Galliano's extraordinary creations for the house of Dior, captured by American Vogue's photographer Robert Fairer
